Peach Burrata Summer Salad
This peach burrata summer salad is bright and fresh! It uses the best summer produce and herbs and will definitely become your new fixation meal.

For the Peach Burrata Salad
- 1 ball fresh burrata
- 2 ripe peaches sliced, (optional) grilled
- 2 cups greens of choice spring mix, butter lettuce, spinach
- 5-6 pitted cherries
- 5-6 sliced cherry tomatoes
- drizzle of honey
- drizzle of balsamic glaze optional
For the Dressing
- 2-3 Tbsp olive oil
- juice of lemon to taste
- zest of 1/2 lemon to taste
- 1/2 shallot diced
- fresh thyme + basil roughly chopped, to taste
- 1 Tbsp balsamic vinegar or to taste
- pinch of salt
For the Dressing
Mix together 2-3 Tbsp of olive oil, some lemon juice, lemon zest, 1/2 of a shallot finely diced, fresh thyme and basil roughly chopped, 1 Tbsp of balsamic vinegar and a pinch of salt until the dressing comes together. Adjust the flavors to your preference by tasting the dressing.
For the Assembly
Add 2 cups of your greens of choice to a bowl and mix together with 2/3 of the dressing. Use your hands or tongs to distribute the dressing evenly about the greens.
If you desire, artfully arrange the dressed greens, sliced peaches, sliced cherries, sliced tomatoes and pulled apart burrata on a plate. Then drizzle the remaining dressing overtop.
Add a drizzle of honey and optionally a drizzle of balsamic glaze.
Serve and enjoy!
