Dearest Reader,
Summer is in full throttle and I’m not sure about you, but where I live it is HOT! Lately all I’ve been craving is a peach burrata salad. Once I put it together and realized how easy it was, I figured I must share it with you so that you can be enjoying it with me! The peach burrata salad is the perfect summer salad for many reasons–
- it’s a low effort, quick and easy summer salad
- it uses fresh peaches and herbs
- it’s cooling, refreshing and healthy!
Truthfully, the peach burrata summer salad has two stars so I would be remiss if I didn’t give them each a bit of appreciation. You’ll want to find the juiciest summer peaches out there! If you have the time friend, I even recommend you take a few extra moments to grill the peaches and enhance those summer flavors! The burrata is equally as important. You’ll find it near the mozzarella in the grocery store. When you assemble the salad, make sure to drizzle some of the dressing over the burrata as it really pops with the citrus and the herbs in the dressing.
You know when a salad dressing hits all of the right notes? It’s punchy, robust and marries the components of the salad perfectly? Well it seems all the salad dressings out there got their blueprint from this one.
olive oil
lemon juice
lemon zest
shallot
thyme
basil
balsamic vinegar
salt
That’s all it takes to make the perfect drizzle dressing for this peach burrata summer salad!
Lastly I must give a little ode to the crucial supporting actors in this delicious summer meal–pitted cherries, cherry tomatoes and a lettuce of your choice (I went with butter lettuce!). Seriously does this not sound like the most perfect summer treat!? You’ll find my instructions below for ratios and assembly and that’s it!

Peach Burrata Summer Salad
Ingredients
For the Peach Burrata Salad
- 1 ball fresh burrata
- 2 ripe peaches sliced, (optional) grilled
- 2 cups greens of choice spring mix, butter lettuce, spinach
- 5-6 pitted cherries
- 5-6 sliced cherry tomatoes
- drizzle of honey
- drizzle of balsamic glaze optional
For the Dressing
- 2-3 Tbsp olive oil
- juice of lemon to taste
- zest of 1/2 lemon to taste
- 1/2 shallot diced
- fresh thyme + basil roughly chopped, to taste
- 1 Tbsp balsamic vinegar or to taste
- pinch of salt
Instructions
For the Dressing
- Mix together 2-3 Tbsp of olive oil, some lemon juice, lemon zest, 1/2 of a shallot finely diced, fresh thyme and basil roughly chopped, 1 Tbsp of balsamic vinegar and a pinch of salt until the dressing comes together. Adjust the flavors to your preference by tasting the dressing.
For the Assembly
- Add 2 cups of your greens of choice to a bowl and mix together with 2/3 of the dressing. Use your hands or tongs to distribute the dressing evenly about the greens.
- If you desire, artfully arrange the dressed greens, sliced peaches, sliced cherries, sliced tomatoes and pulled apart burrata on a plate. Then drizzle the remaining dressing overtop.
- Add a drizzle of honey and optionally a drizzle of balsamic glaze.
- Serve and enjoy!
