Why these are the BEST funfetti cookies…
You just can’t go wrong with the classic sugar cookie with rainbow sprinkles added to them. It’s the perfect marriage of soft sugar cookies and eye catching sprinkles that do really make the cookies fun. I mean fun is LITERALLY baked in!
My funfetti cookies are special. And by special, I mean that they’re a classic recipe done well. Bake Off fans will recall that Paul Hollywood often says a classic bake has to be done well. There aren’t a bunch of steps or ingredients to hide behind, which is why the best quality ingredients matter for a simple cookie recipe like this.
I have become a big believer in Kerrygold Irish Butter for its noticeably better quality, producing more delicious final results for my bakes. With a great butter, a good sugar and quality vanilla extract, you’ll notice a huge difference in the final outcome of these funfetti cookies. My recipe uses a combination of baking soda and baking powder to give you the perfect spread (for perfect lightly crunchy edges) and rise (for that soft and chewy middle). The bake time is 10 minutes in a 350F oven so that they come out of the oven with the perfect amount of time to finish baking on the pan.

How to Make this funfetti cookie recipe.
In a medium/large bowl place your room temperature unsalted butter and granulated sugar. Mix with a hand mixer (or use your stand mixer) on medium/high speed for 2-3 minutes until the mixture becomes lighter.

Add in the room temperature egg and vanilla extract and mix until combined.
In a separate medium bowl, whisk together the all purpose flour, baking powder, baking soda and salt. Be sure to whisk for a little longer than you think you need to really disperse the powders and the salt throughout the flour. Pour the dry mix into the bowl and mix carefully until combined. Be sure not to overmix at this stage.
Stir in the rainbow sprinkles (I enjoy these kind but any you have on hand should be fine) by using a spatula until they are distributed evenly throughout the batter.
Use a cookie scoop or spoon to make 15 cookie dough balls and place them in a container be chilled. I use this 1.5 Tbsp cookie scoop and do two scoops per cookie. As long as you have 15 cookies that are all relatively the same size in the end it should be fine!

Chilling these Funfetti Cookies
I know it’s annoying when you make cookie dough and are then told you have to wait before you can enjoy the fruits of your labor, but this funfetti cookie recipe only requires chilling for 30 minutes, not 1 hour like most recipes.
Personally, I like to use that time to wash any dishes, clean the counters, make a cup of tea. Read more about this tactic below…
Preheat your oven to 350F close to the end of the chill time.
When the cookie dough is done chilling place the cookies on the prepared baking sheet at least 2 inches apart from each other. I find that I can fit about 6 cookies on a sheet. See how I do this in the YouTube Tutorial here.
Bake for exactly 10 minutes!
The trick for perfectly soft funfetti cookies is to slightly underbake them. They will bake a little more while they are cooling on the baking sheet. This is the secret to soft cookies, always take them out of the oven when they are almost at the stage you would like to eat them at!

Remove the cookies from the oven, allow them to cool on the baking sheet and ENJOY!
You can prepare the cookie dough ahead of time by mixing the batter and scooping 1″ dough balls into an airtight container. Refrigerate them for as long as 3-5 days or freeze them for up to 3 months! When it’s time to bake them, just allow the dough to sit out for at least 10 minutes at room temperature before popping them into the oven. Otherwise they won’t spread as much.

Can baking be therapeutic?
I often talk about baking being a therapeutic hobby but I’d like to share more about why I feel that way as well as how it can become a relaxing hobby for you!
When I bake, it’s my creative time. I may put on my favorite nostalgic movie or tv show in the background, or a Spotify playlist titled “French café” and leave my troubles behind.
Sometimes I pour myself a glass of wine and light a candle. Then, with the mood set, the mixing of batter, kneading of dough and smoothing of icing is my only care in the world.
When I say baking is therapeutic, sometimes people respond saying “not for me it isn’t!” I completely understand why someone might feel that way. There have been plenty of times where I spend hours on something only for it to fail or something breaks that shouldn’t or I forget to clean as I go and am left with a disastrous kitchen to clean.
So I should in reality, have a caveat to my “baking as therapy” claims…
Baking is therapy when you curate the experience to be relaxing.
How do you curate that relaxing experience for yourself, you ask?

How to make baking therapeutic…
- Prepare your mind–know that it’s okay if the cake doesn’t rise, or the butter wasn’t chilled enough. Shift your mindset from seeing your failures as mistakes to seeing them as opportunities for learning.
- Prepare your space–I cannot and will not bake on top of a messy kitchen. If I were to do this I would be starting from a place of stress! Take an extra 10 minutes to clean any dishes in the sink and wipe down the counters, this small effort will pay you back greatly in brain space and clarity.
- Clean as you go! I’ll tell you the one way to make baking stressful and tiresome, is to not clean as you go! After I use each ingredient that I no longer need, I put it away.
After each major step in the process, I wipe down the counters and put dishes that are no longer needed in the sink. If there is chill time or baking time I don’t sit, I do the cleaning then. Make this shift and you’ll really notice the difference!
By the way, this last tip really helped me when I was on The Great American Baking Show–and the crew that cleaned up behind us made a point to tell me that my workspace was always so clean they didn’t have much to do!
I would reply by saying “it’s how I stay sane in this tent!”
Additional suggestions:
*Maybe try printing off the recipe instead of looking at it on your phone, tablet or laptop and use this time to unplug from technology for a few hours
**Invite friends or family over to share your creation with you. Time spent with loved ones over food is a universally special experience

Ingredients:
- 3/4 c (170g) unsalted butter, room temperature
- 1 1/4 c (250g) granulated sugar
- 1 large egg (room temperature)
- 1/2 Tbsp vanilla extract
- 2 c (250g) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 c (90g) rainbow sprinkles
Instructions:
- In a medium/large bowl place 3/4 cup (170g) of room temperature unsalted butter and 1 1/4 cups (250g) of granulated sugar. Mix on medium/high speed for 2-3 minutes until the mixture becomes lighter.
- Add in 1 large room temperature egg and 1/2 tbsp of vanilla extract and mix until combined.
- In a separate bowl, add 2 cups (250g) of all purpose flour, 1 tsp of baking soda, 1/2 tsp of baking powder and 1/2 tsp of salt and whisk well until combined. Pour the dry mix into the wet and mix carefully until combined. Be sure not to overmix at this stage.
- Stir in 1/2 cup (90g) of rainbow sprinkles by hand until they are distributed evenly throughout the batter.
- Scoop the batter into 15 cookie dough balls and chill covered for just 30 minutes.
- Preheat your oven to 350 oF (about 180 oC) and line two baking sheets with parchment paper.
- Place the cookies on the prepared baking sheet at least 2 inches apart from each other. You should be able to fit about 6 cookies on a sheet.
- Bake for exactly 10 minutes. The cookies will still look a little underdone but will finish baking on the hot sheet once removed from the oven.
- Remove the cookies from the oven, allow them to cool on the baking sheet and ENJOY!
